- 1 large bag red skin or new potatoes
- 3-4 Tbs. fresh thyme, chopped (or other herb)
- 1 clove garlic, chopped
- Kosher salt
- Fresh ground pepper
- Olive oil
Boil potatoes in large pot of water until fork tender. Drain.
Preheat oven to 450 degrees F.
Drizzle olive oil on a baking sheet. Be generous with the olive oil to avoid sticking. Place potatoes on baking sheet and leave space between. With a potato masher (or the back of a drinking glass), smash the potatoes so they are flattened.
Drizzle potatoes with olive oil. Generously salt potatoes and add freshly ground black pepper. Sprinkle thyme (or other herb) and garlic on top.
Bake in oven for 20-25 minutes until crispy.
