  • 1 tsp. smoked paprika
  • 1/2 tsp. paprika
  • 1/2 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. cumin
  • 1/4 tsp. fresh thyme leaves
  • 1 tsp. salt
  • 1 tsp. olive oil
  • 1 (4 lb.) whole chicken
  • 1/2 yellow onion
  • 1/2 lemon
  • A sprig of thyme

Preheat oven to 300 degrees F.
In a small bowl, combine the smoked paprika, paprika, onion powder, garlic powder, cayenne pepper, cumin, thyme, and salt.  Mix well. 
Rub the olive oil all over the chicken.  Sprinkle the spice mixture on the chicken and rub all over, as well as under the skin.  Stuff the chicken with the onion, lemon, and sprig of thyme.  Place the chicken on a roasting pan and bake for 3 1/2 - 4 hours, or until the internal temperature is 170 degrees F.
