  • 11 oz. pasta
  • 1 small carrot, grated
  • 1 small onion, chopped
  • 1/2 C. cucumber, diced
  • 1/2 C. celery, diced
  • 8 oz. smoked salmon, cut into pieces
  • 1/3 C. mayonnaise
  • 2 tsp. lemon juice
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch cayenne pepper
  • 1/2 C. Parmesan cheese, grated

Bring a pot of lightly salted water to a boil and add in the pasta. Cook for about 12 minutes, or until it's cooked through but still firm. Drain and rinse with cold water. Transfer the cool pasta to a bowl. Toss in the carrot, onion, cucumber, celery, and salmon with the pasta and mix well. In a small bowl, combine the mayonnaise, lemon juice, salt, pepper, and cayenne pepper. Pour the sauce over the pasta and coat well. Sprinkle with the Parmesan cheese and serve.
