Smoked Salmon Eggs

Ingredients
- 6 hard-cooked eggs, halved lengthwise
- 3 Tbs. cream cheese, softened
- 1 Tbs. sour cream or plain yogurt
- Salt and white pepper
- 1/4 C. minced smoked salmon, plus 12 1/2 inch pieces for garnish
- 1 Tbs. chopped red onion
- 1 Tbs. drained capers
- 1 tsp. snipped chives for garnish
Directions
Place egg yolks in a small bowl and mash with a fork. Add cream cheese and sour cream or yogurt, 1/8 to 1/4 tsp. salt and pepper to taste and mix until smooth. Stir in 1/4 C. salmon, onion and capers. Mound mixture into white halves, top with a small piece of salmon for garnish and sprinkle with chives.
