Slices of smoked salmon have been layered between lettuce, red onions, and multigrain bread, and they've all been tied together with a dab of herb cream cheese. While we suggest serving on a multigrain bun, you can use two slices of your favorite bread or sliced-in-half Hawaiian rolls.

  • 4 oz. Low-Fat Cream Cheese, softened
  • 2 tsp. Fresh-Snipped Chives
  • 2/3 tsp. Parsley Flakes
  • 1 tsp. Dijon Mustard
  • Ground Black Pepper, to taste
  • 4 Multigrain Buns, halved and toasted
  • 1 Medium Red Onion, thinly sliced
  • 1 lb. Thin-Sliced Smoked Salmon
  • 1 1/2 C. Arugula

In a medium bowl, mix together the cream cheese, chives, parsley, mustard, and ground black pepper until smooth. Layer half of the multigrain bun halves with red onion slices, smoked salmon, and arugula leaves. Spread a dollop of the cream cheese mixture onto the other bun halves. Place the bun halves spread-side-down atop the salmon-covered bun halves, and serve.
