  • ½ lb. d’Antan white cheese
  • 2 T. fresh chives, minced
  • salt
  • ground pepper
  • 4 wheat flour tortillas
  • 6 oz. smoked salmon
  • 1 small red onion, thinly sliced
  • extra virgin olive oil

In a small bowl, mix cheese and chives thoroughly. Season. Lay tortillas on work surface. Divide the cheese among the four tortillas and spread to the edges. Lay the smoked salmon in the centre. Lay red onion rings over the salmon and roll tortillas up. Cut tortillas to make bite-sized wraps. Serve with sliced tomatoes drizzled with olive oil and seasoned with freshly ground pepper and salt.
