Ingredients

  • 3 Cups leftover mashed potatoes, cold
  • 2 Tablespoons chopped green onions
  • 2/3 Cups shredded cheddar cheese
  • 2 Cups of spicy chorizo, cooked
  • 1 Large egg, lightly beaten and divided
  • ½ Teaspoon black pepper
  • ¼ Teaspoon garlic powder
  • 3 Tablespoons flour

Directions

Preheat the oven to 375F.

In a bowl, combine and stir together the green onion, cheese, egg, flour, pepper, chorizo and garlic powder until combined. Set aside.
Take some of the leftover mashed potatoes and begin forming into a ball. Take some of the sausage mixture, push and squeeze into the center of the ball and continue to roll the ball so that the sausage in not visible on the exterior. Repeat with rest of the mashed potatoes and mixture.
Lay balls on a greased baking sheet, place in oven and cook for about 12 minutes.
Then let cool and serve.
