  • 2 tsp. hot paprika
  • 1/2 tsp. ground cumin
  • Salt
  • Pepper
  • 3 lb. boneless pork shoulder
  • 2 tsp. vegetable oil
  • 1/2 cup apple cider vinegar
  • 3 Tbs. tomato paste
  • 6 potato buns
  • Barbecue sauce
  • Coleslaw
  • Potato chips

Combine paprika, cumin, two teaspoons salt and half a teaspoon pepper in a small bowl. Rub the spice mixture all over the pork.

Heat the vegetable oil in a large skillet and cook pork until browned on all sides, about five minutes.

Add the vinegar, tomato paste and 2 cups water to the slow cooker and whisk to combine. Add the pork, cover and cook on low for 8 hours.

Once it’s done cooking, bring pork to cutting board and chop into bite-sized pieces. Serve on buns with barbecue sauce and coleslaw and a side of potato chips.
