Ingredients

  • 2 salmon fillets
  • 2 tsp. cayenne pepper
  • 2 tsp. ground black pepper
  • 2 tsp. olive oil
  • Salad
  • feta cheese
  • 1 small yellow pepper, chopped roughly
  • 1/2 red onion, sliced thin
  • 1 roma tomato sliced
  • 2 C. spinach
  • 2 tsp. olive oil
  • 1 tsp. minced basil
  • 1 T. lemon juice

Directions

Preheat toaster oven to 450ºF.

In a small bowl mix ground peppers and olive oil together until well combined. Then coat each fillet on both sides with mixture and place on a lined baking pan. Place pan into toaster oven and let cook for 5-15 minutes, or until salmon is flaky.

In a large bowl combine salad ingredients except and mix until all ingredients are lightly coated with vinaigrette.

Serve salmon with salad.
