  • 1 ½ lb. leeks, sliced
  • 2 lb. potatoes, peeled and cubed
  • 2 (14 oz.) cans vegetable broth
  • ½ stick butter
  • Salt and pepper to taste
  • 1 C. cream

In your crockpot, combine leeks, potatoes, broth, butter, salt, and pepper. Cook on high for 4 hours. When vegetables are tender, use an immersion blender to blend until cream. Stir in cream and cook on low for an additional 30 minutes.
