  • 2 T. olive oil
  • 3 cloves garlic, minced
  • 1 1/2 C. chicken stock
  • 1 1/2 C. whole milk
  • 1/2 lb. bowtie pasta
  • 2 T. butter
  • 2 oz. cream cheese, cubed
  • 1 C. fresh grated Parmesan cheese
  • 1/4 C. scallions, chopped
  • salt and pepper to taste

In a large skillet, heat olive oil over medium heat. Add garlic and sauté for one minute. Pour in chicken stock and milk. Stir in pasta. Bring to a boil, cover, and reduce heat. Continue cooking for 15 minutes. Whisk in butter and cream cheese until well combined and melted. Sprinkle with Parmesan and scallions. Stir frequently for another few minutes, making sure all cheese has melted and the mixture is incorporated. Serve immediately.
