  • 2 lb. potatoes, peeled and thinly sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 T. butter
  • 3 T. all-purpose flour
  • 2 C. milk
  • ½ C. heavy cream
  • Salt and pepper to taste
  • 1 ½ C. cheddar cheese, shredded
  • ¼ C. Parmesan cheese, grated

Preheat oven to 350 degrees. In a saucepan, melt butter and whisk in flour while cooking for a minute. Add in onion and garlic; sauté briefly. Pour in milk and cream and season with salt and pepper. Bring mixture to a boil, reduce heat, and simmer while whisking as sauce thickens. Add in cheddar and half of the Parmesan and stir until melted. In a greased baking dish, layer potato slices, pour sauce over potatoes, and top with remaining Parmesan. Cover with foil and bake for 1 hour. Uncover and bake for an additional 15 minutes until golden.
