Smooth Broccoli and Quinoa
- 3 coffee scoops quinoa
- 1 medium broccoli crown, cut into bite sized pieces
- 1/4 C. reduced or non-fat ricotta
- 1 small shallot, diced
- 1 Tbs. Smart Balance butter
- Ground black pepper
- 3 Tbs. parmesan
- 1/4 C. shredded fat free or low fat mozzarella (optional)
Cook quinoa in salted water, adding broccoli crowns 4 minutes before done. While quinoa is cooking, sauté shallot and butter in skillet until tender. Once cooked, drain broccoli and quinoa well and add remaining ingredients. Salt and pepper to taste.
If you want to make this more luscious, pour into a casserole dish, add mozzarella on top and bake until bubbly. Serve with salad packed with veggies and non-fat dressing for a balanced meal.
