Smooth Lemon Curd

Ingredients
- 2 C. lemon juice (fresh squeezed- approx. 7 lemons)
- 2 C. sugar
- 7 eggs
- 7 yolks
- 1 lb. butter
Directions
Put sugar and lemon juice in large mixing bowl then place large mixing bowl over top a pot of water on meduim fire. Add egg yolks; stir continuously until it slightly starts to bubble, turning bowl over fire at the same time as beating the mix. Beat until it's smooth. Next, stir in butter every 3-4 minutes until completely melted. When finished, pour into quart containers.
