Smooth Lemon Curd

This lemon curd is good on a tart along with some fresh berries.

Ingredients

  • 2 C. lemon juice (fresh squeezed- approx. 7 lemons)
  • 2 C. sugar
  • 7 eggs
  • 7 yolks
  • 1 lb. butter

Directions

Put sugar and lemon juice in large mixing bowl then place large mixing bowl over top a pot of water on meduim fire. Add egg yolks; stir continuously until it slightly starts to bubble, turning bowl over fire at the same time as beating the mix. Beat until it's smooth. Next, stir in butter every 3-4 minutes until completely melted. When finished, pour into quart containers.
