Enjoy sweet dreams of French toast topped with fresh bananas and chopped walnuts, and drizzled in honey. If you'd like additional touches of sweetness, you can serve the French toast with extra honey and vanilla yogurt.

  • 2 loaves Brioche, cut into 1-inch slices
  • 8 oz. Low-Fat Cream Cheese, room temperature
  • 6 to 8 Bananas, sliced
  • 4 Tbs. Light Brown Sugar
  • 1 C. Chopped Walnuts
  • 4 Tbs. Earth Balance Vegan Buttery Stick, thinly sliced
  • 6 Eggs, lightly beaten
  • 1/2 C. Skim Milk
  • 2/3 C. Honey
  • 2 tsp. Ground Cinnamon
  • 1/4 tsp. Ground Nutmeg
  • 1 Tbs. Pure Vanilla Extract

Lightly grease a large crock pot with cooking spray. Spread both sides of Brioche slices with cream cheese. Place bread on the bottom of the crock pot. Layer banana slices over the bread slices. Sprinkle bananas with brown sugar and walnuts. Top the bananas with the butter slices and set aside. In a medium-sized bowl, whisk together eggs, milk, honey, cinnamon, nutmeg and vanilla extract. Pour egg mixture over bread. Cook on low overnight or 6 to 8 hours.
