A Little different take on Smothered Chicken Great with other meat too, particularly Pork Chops.

Ingredients

  • 1 Tbsp salt
  • 2 Tbsp pepper
  • Vegetable oil cooking spray
  • 1/2 C. chopped onions
  • 1/2 C. chopped celery
  • 1/2 C. chopped bell peppers
  • 3 cloves fresh garlic, peeled and chopped
  • 3 Tbsp Worcestershire Sauce
  • 3 trays ice cubes

Directions

Several sprinkles of your favorite brown gravy mix Cut the hen into 8 pieces and sprinkle evenly with salt and pepper Spray a large skillet with vegetable oil cooking spray and place over medium heat. Add the chicken. Brown the chicken on all sides, then remove from the pan. Drain off the excess oil and fat, but leave in the brown desiment on the bottom, for that will flavor the gravy. Add the onions, celery, bell peppers and garlic, and sauté just until the vegetables begin to brown around the edges. Add the Worcestershire sauce, then return the chicken to the pan. Place the ice cubes on top of the chicken, sprinkle the brown gravy mix evenly over all, cover and let simmer until the chicken is cooked through and tender, at least 1 hour. Check for doneness and continue cooking for up to an additional 30 minutes if necessary.
