I use an electric roaster to prepare this tasty dish but will add the directions for using a shallow roasting pan in a regular oven. This has become a family favorite with its rich flavor and creamy sauce.

Ingredients

  • 1/2 C. mayonnaise
  • 1 Tbs. roasted garlic and herb seasoning (McCormick’s® Grill Mates)
  • 1/2 tsp. garlic salt
  • 3 lbs. chicken pieces (thighs, drumsticks, or halved breasts)
  • 4 lg. shallots, peeled and diced
  • 1 Tbs. extra virgin olive oil
  • 2 C. dry white wine
  • 1/2 C. heavy cream
  • one 1.6-oz. pkg. garlic and herb sauce mix (Knorr®)
  • salt and pepper to taste

Directions

Preheat oven to 375 degrees (I use an electric roaster). In a bowl, stir together mayonnaise, herb seasoning, and garlic salt; liberally brush on chicken pieces. Place chicken in roasting pan. Toss shallots with olive oil and scatter around chicken. Roast for 45–55 minutes or until chicken is no longer pink at bone and juices run clear. Transfer chicken to serving platter and loosely cover with foil to keep warm. Place roasting pan on range top over medium-high heat. (Again, you can use electric roaster at 375 degrees.) Add wine and reduce by half. Stir in cream and sauce mix. Bring to a boil; reduce heat and simmer while stirring until thickened, about 3 minutes. Season to taste with salt and pepper and spoon over chicken.
