Smothered Chicken with Rice

This is a quick and easy recipe that will become a family favorite in no time.

Ingredients

  • 2-3 chicken breasts
  • 1/2 large red or green bell pepper, sliced and diced
  • 1 medium onion, sliced
  • 1 small can mushrooms or 3 fresh mushrooms
  • 1 C. chicken gravy
  • 2-3 C. cooked rice
  • 2 Tbs. low salt butter or margarine

Directions

Brown the onion and bell pepper until tender, add mushrooms and cook until mushrooms are heated through. Remove vegetables or push to one side and add the chicken breast, cover and cook for 25-30 minutes. Make 1 C. of chicken gravy using gravy mix or chicken broth. May use more gravy if you like. Add gravy to chicken and vegetables, cover and continue to cook until chicken in tender. Serve over rice or buttermilk biscuits.
