  • 1 C. (2 sticks) butter or margarine
  • 1/3 C. corn syrup
  • 1 C. brown sugar
  • 1 tsp. vanilla extract
  • 4 C. oatmeal
  • 1 C. flaked coconut
  • 1/2 C. chopped walnuts or pecans
  • 8 oz. marshmallows
  • 4 C. Rice Krispies cereal
  • 1/2 C. chocolate chips
  • 1/2 C. peanut butter

In a large saucepan, over low heat, melt and stir butter, syrup, sugar and vanilla. Stir in oats, coconut and nuts. Cook over low heat, stirring constantly for about 3 minutes. Stir in the marshmallows and when melted stir in the Rice Krispies. Using a buttered spatula or wooden spoon, press mixture evenly into buttered 9x13 inch pan. Cool. In a small pan melt chocolate chips and peanut butter. Spread over oatmeal mixture. Cool again and cut into squares.
