Snow Time Beef Casserole

This attractive dish is like a cannelloni without the pasta and the extra effort. Exceptional. This casserole will warm up even the coldest heart in wintertime.

  • 1 lb. ground beef
  • 2 8 oz. cans tomato sauce
  • 1/4 C. chopped onion
  • 1 tsp. parsley flakes
  • 1/2 tsp. oregano
  • 1 tsp. basil
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 10 oz. pkg. frozen chopped spinach, cooked and drained.
  • 1 pint cottage cheese
  • 1 8 oz. pkg. mozzarella cheese slices

Brown beef in skillet; pour off fat. Stir in tomato sauce, onion, parsley, oregano, basil, 1/2 tsp. salt, and pepper. Simmer uncovered 10 minutes, stirring occasionally. Combine spinach with cottage cheese and remaining 1/4 tsp. salt. Spoon spinach mixture around edge of baking dish (9x13 inch). Pour beef mixture into center. Cut each mozzarella slice into 3 lengthwise strips. Arrange in lattice design over meat. Bake at 375 degrees for 20 minutes.
