  • Pork Marinade
  • ½ C. lemongrass, minced
  • ½ C. sugar
  • 5 shallots, minced
  • 3 tsp. Garlic, minced
  • 2 Tbs. sesame oil
  • 2 Tbs. olive oil
  • 2 Tbs. soy sauce
  • 1 ½ Tbs. fresh pepper, cracked
  • Sandwich
  • 2 lbs. Boneless pork butt
  • 4 8-in. Baguettes
  • 1 bunch cilantro, chopped
  • 5 jalapenos, thinly sliced
  • Pickled veggies
  • Mayonnaise

Whisk all of the marinade ingredients together in a bowl. Pound the pork with a mallet and place the pork in the marinade for at least 2 hours and up to overnight. Heat a skillet on medium-high heat and cook the pork for 10-15 minutes until the pork is fully cooked. Slice the baguette in half and spread the mayo. Place the pork inside and top with the jalapeno, veggies, and cilantro (to taste).
