Soft Pineapple Cookies
Ingredients
- 1 C. brown sugar
- 1 C. white sugar
- 1 C. vegetable shortening
- 2 eggs
- 1 2 lb. can drained crushed pineapple, crushed
- 1 1/2 tsp. salt
- 1 tsp. baking soda
- 4 C. or more flour
Directions
Cream shortening and sugar. Beat in eggs. Add dry ingredients. Add flour a little at a time after 3 C. May need more or less depending on moisture of pineapple. Should be a stiff cookie dough Drop by spoons. This takes a little practice with adjusting flour. Bake 350 degrees for 10 minutes.
