  • 4 onions
  • 3 C. flour
  • 3 C. white cornmeal
  • 4 C. vegetable oil
  • 6 C. ice cold water, divided

Slice onions into ½ inch thick slices and soak in a bowl of 3 cups of ice water. Heat oil in deep fryer or deep skillet until bubbling. Take rings, coat with flour, quickly dip into second bowl of remaining ice water, coat in cornmeal, and place in oil. Fry rings until golden brown, transfer to a cooling rack lined with paper towels to drain, and serve.
