It’s officially soup season and I’m sure you’ll really enjoy this one! It has French bread, caramelized onions and cheese! It’s fantastically flavorful.

  • 1 C. caramelized onions
  • 1 T. thyme, chopped
  • 1 T. flour
  • 1 ½ C. Swiss cheese
  • 2 T. cognac
  • 3 ½ C. beef broth
  • Salt
  • Pepper
  • French baguette, sliced

Take your already caramelized onions and sprinkle them with flour. Make sure they are completely covered in the flour. Add the cognac, thyme, salt and pepper. Stir well. Add the beef broth and let everything simmer over a medium heat for 40 minutes. While this is happening toast your bread until it is a light brown. Your soup should be done. Pour your serving of soup into a bowl. Top it with a few slices of bread and cheese. Place this into the oven on a baking sheet until the cheese starts to boil. Serve and enjoy! It’ll be very hot so be careful.
