Sour Creamed Green Beans

Turn ordinary green beans into a creamy casserole.

  • 2 Tbs. Unsalted butter
  • 1 small onion, chopped
  • 1 lb. Canned green beans, drained
  • 3/4 C. sour cream
  • 3 Tbs. All purpose flour
  • 3/4 C. shredded cheddar cheese
  • 3/4 C. breadcrumbs

Preheat oven to 350 F. Melt 1 tsp. butter in a heavy nonstick skillet over medium high heat. Sauté onion 5 minutes, or until tender. Combine green beans and next 2 ingredients in a bowl. Season with salt and pepper to taste. Add sauté onion and stir. Pour into a buttered casserole dish. Sprinkle with cheese. Melt remaining butter and stir into breadcrumbs. Sprinkle over top of casserole and bake 25 minutes.

Serves 4.
