  • 7 C. vegetable stock
  • 1 1/2 C. pumpkin puree
  • 1 1/4 tsp. ground cinnamon, divided
  • 1 tsp. chili powder
  • 1/4 tsp. allspice
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • 2 Tbs. honey
  • 1/2 C. sour cream
  • Salt and pepper to taste

In a large pot over medium heat, mix pumpkin puree and vegetable stock until smooth. Bring to a simmer. Add 1/4 tsp. cinnamon, the remaining spices and honey. Cook for 20 to 25 minutes. Add more water if too thick. Remove from heat and whisk in sour cream. Season with salt and pepper to taste. Garnish with remaining cinnamon before serving.
