Southern Chicken Noodle Soup

This is a twist on an all around favorite comfort food. It's easy to make and full of fresh veggies. It's great on a cold winter's day served with hot dinner rolls and a crisp salad.

Ingredients

  • fresh chicken (breast or even thigh quarters)
  • 1/2 C. chopped green onions
  • 1 C. grated cabbage (red or green)
  • 1/2 C. diced red raddishes
  • 1/2 C. diced carrots
  • 1/2 C. chopped celery
  • 1 tsp. fresh rosemary (or dried)
  • egg noodles
  • garlic powder to taste
  • salt and fresh ground pepper

Directions

Begin by browning the chicken in the bottom of a heavy soup pot. Add all veggies and seasoning with 6 cups of water. Continue cooking over low heat until chicken is falling off the bone and veggies are flavorful and tender. Bring to a low boil, add egg noodles and cook until tender. Serve with hot dinner rolls and/or crackers.
