Southern Fried Corn Supreme

As a child, I always looked forward to sunday dinner at grandma's house where she made her southern fried corn supreme.I have kept the tradition going for 40 years. I hope that you enjoy it as much as my family has.

  • 1 15.25 oz. can corn
  • 3 heaping T. butter or oleo
  • Asalt to taste
  • Pepper to taste
  • 2 garden onions, cleaned and diced,use tops too
  • 1 C. frozen , breaded okra
  • 1 small can mushrooms or 1/2 C. fresh mushrooms (optional)
  • 1/2 C. green pepper
  • 3 slices of bacon fried and coarsley crumbled

Deep fry okra and set aside. Fry bacon slices,crumble and set aside. Melt butter or oleo in large skillet. Saute onions,green peppers for 1 minute. Add mushrooms, saute 30 seconds. Add drained corn. (You can add a little more butter if you desire.) Turn heat up to medium-high. Add seasonings, fry for 1 1/2 minutes more. Add okra and crumbled bacon to corn. For a spicy or Mexican flair you can add a touch of red pepper or spanish paprika.
