Southern Grit and Shrimp Towers

Combination of Southern style, grits, and the ever popular seafood, shrimp. The presentation is great for entertaining, plus the cost to prepare this dish is very economical.

  • Sauce:
  • 1 C. fresh basil
  • 2 Tbs. olive oil
  • 1 C. mayonnaise
  • 1 Tbs. yellow mustard
  • juice from 2 lemons
  • salt and pepper, to taste
  • 16 extra lg. shrimp
  • Minced garlic
  • juice from 1 lemon
  • 1 Tbs. olive oil
  • Grit cakes:
  • 2 C. water
  • 2 tsp. butter
  • 1/2 C. grits
  • 1/4 C. grated Parmesan cheese
  • Flour for dredging
  • 2-4 Tbs. canola oil for frying cakes
  • Baking pan coated with oil

Mix all sauce ingredients in blender. Save to serve with dish. Wash, peel and devein shrimp. Heat olive oil to medium and add shrimp, garlic and lemon juice. Cook quickly until shrimp turns pink. Remove from heat immediately.

For grit cakes (can be prepared ahead of time): Bring water and butter to a boil and reduce to medium. Add grits and cook about 5 minutes. Pour grits into a prepared baking pan. Let cool. Cut cakes out with biscuit cutter. Flour both sides of cake and fry in hot oil about 2 minutes per side. Remove from heat.

To prepare dish: Assemble by layering a spoonful of sauce on the plate, add grit cake and 2 shrimp. Add another grit cake and 2 shrimp. Top with remaining sauce and serve with lemon wedges.
