Southern Lemon Chess Pie

This is along the lines of a custard. My mama made this every year for Thanksgiving and Christmas. It has more cornmeal (yellow preferably) than others and has no flour. The cornmeal gives it a crunchy texture and unique taste. Mama's original pie called for sugar, but I made this recipe with Splenda so it would be sugar-free.

Ingredients

  • 1 9-inch deep dish pie shell
  • 1/4 C. yellow cornmeal
  • 2 C. splenda
  • 4 eggs, beaten
  • 1/4 C. milk
  • 1/4 C. lemon juice concentrate
  • 1/4 C. melted margarine (or butter)
  • 1 tsp. vanilla

Directions

Preheat oven to 350 degrees. In medium bowl, combine all ingredients except pie shell. Blend well until smooth. Pour into pie shell. Bake in preheated oven 35-40 minutes or until golden brown and toothpick inserted in center comes out clean.
