Southern Potato Salad

Ingredients
- 10-12 medium sized potatoes
- 1 C. mayonnaise
- 2 oz. pimentos
- 1 medium sweet onion
- 1/2 C. sweet pickles, cubed
- 1 Tbs. mustard
- Salt and pepper to taste
- 4 hard boiled eggs, peeled and cut into pieces
- Paprika
Directions
Cook potatoes until fork easily pierces. Drain potatoes, add all ingredients, except paprika. Stir together and sprinkle top with paprika. Place in the refrigerator.
Tip: You can add a little more mayonnaise or less depending how creamy you like it.
