Southern Scalloped Pineapple

  • 1/2 C. butter, softened
  • 1 1/2 C. sugar
  • 3 eggs
  • 1 large can pineapple chunks, drained
  • 1 small can crushed pineapple with juice
  • 1/2 C. cream
  • 5 C. bread cubes (white bread with crust removed, cubed small)

Cream sugar and butter with mixer. Add eggs and beat well. Add pineapple, cream and bread cubes and stir well. Pour into greased casserole or oblong baking dish. Cover with plastic wrap and refrigerate overnight. Next morning, bake uncovered 350 degrees approximately 1 hour and 15 minutes or until set and lightly brown.
