  • 1 jar whole dill pickles, cut into spears
  • 2 tsp. dill, chopped
  • 1 C. milk
  • 1 egg
  • 1 C. cornmeal
  • 1 C. flour
  • 1 tsp. paprika
  • 1 tsp. salt
  • 1 tsp. pepper
  • Pinch of cayenne
  • Small splash of pickle juice
  • Peanut oil for frying

Preheat deep-fryer to 375 degrees F. In a casserole dish, beat milk, egg, pickle juice, and cayenne together. In a separate dish, combine cornmeal, flour, paprika, salt, pepper, and dill. After drying pickle spears with paper towels, dip in milk mixture and then in flour mixture. Place coated pickle spears in deep-fryer, and fry for 2 minutes or until golden brown. Drain on paper towels and season with salt. Serve with ketchup.
