This cornbread is the best to top off your next country style meal! Baked in a skillet, it has a great rustic feel and delicious classic cornbread taste!

  • 1 ¼ C. cornmeal
  • 1 ¼ C. flour
  • 2 T. sugar
  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda
  • 1 ¼ tsp. salt
  • 1 ¾ C. buttermilk
  • 1 egg
  • 2 T. butter, cubed

Whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt in a large bowl. In a separate bowl, whisk together the buttermilk and egg, then pour the buttermilk mixture into the dry ingredients. Stir the batter together until completely combined. Melt the butter in a cast iron skillet, in the oven heated to 425 degrees. Remove from the oven and swirl the butter so it coats the bottom and sides of the skillet. Pour the batter into the pan and smooth over the top. Bake for 20 minutes and cool before serving.
