Southern Sweet Potato Casserole

Ingredients
- 3 C. fresh boiled sweet potatoes, peeled and mashed (approx. 5 med sized)
- 2 eggs, slightly beaten
- 1/3 C. soft butter
- 1/2 C. milk
- 1 C. sugar
- 1/2 tsp. salt
- 1Tbs. vanilla
- Topping:
- 1 C. light brown sugar
- 1/3 C. self rising flour
- 1/3 C. butter
- 1 1/2 C. pecans, cut up
Directions
Boil fresh sweet potatoes until soft, approximately 45 minutes. Cool slightly and mash with a mixer or by hand. Mix first ingredients well into the mashed sweet potatoes. Pour into oblong pan. Make topping, and sprinkle over the top of the sweet potatoes. Bake in 350-degree oven for 30-45 minutes or until top is golden brown.
