Southwest Corn Casserole
Ingredients
- 1 can corn
- 1 can creamed corn
- 1 can diced Ortega green chilies
- 4 green onions, chopped
- 1/2 tsp. ground cumin
- 1/2 tsp. dried basil
- 1/4 tsp. black pepper
- 2 eggs
- 1/4 C. Bisquick
- 1 C. grated cheddar cheese
Directions
Mix all ingredients together. Spread into a greased casserole dish. Top with additional grated cheese. Bake in a 375° oven until top is browned – approximately 40 minutes.
