Ingredients
- 2 tablespoons vegetable oil
- 1 medium chopped onion
- 2 sliced cloves garlic
- 1 minced chipotle in adobo sauce
- 1 tablespoon chili powder
- 2 teaspoons salt
- 6 cups chicken broth
- 1 cup corn kernels
- 1 ripe chopped tomato
- 1 cup shredded cooked chicken
- 1/2 cup cilantro leaves
- 1 dozen corn tortilla chips

Directions
Heat oil over medium heat in a saucepan. Add onion, chipotle, chili powder, garlic, and salt and cook until onion softens, around 5 minutes. Add chick broth and bring to a boil. Reduce heat slightly and let simmer uncovered for 10 minutes. Add corn and cook for 5 minutes. Turn off heat and stir in tomato, chicken, cilantro, and lime juice. Put tortilla chips in bowls and ladle soup on top.
