Southwest Taco Salad

A great recipe for a taco salad with a twist of southwest chipotle style flavor.

Ingredients

  • 1 tsp. olive oil
  • 1 C. diced onions
  • 1 lb. extra (95%) lean ground beef
  • 3 Tbs. Mrs. Dash® Southwest chipotle 10-Minute Marinade
  • 1 bunch romaine lettuce - torn
  • 1/2 C. shredded fat – free cheddar cheese
  • 1 can (15.5 oz..) dark kidney beans - drained and rinsed
  • 2 large tomatoes - diced

Directions

Add oil to large saucepan and heat. Add 1/2 C. onions, and cook until soft. Add beef, increase heat and continue to cook for 5 minutes, stirring occasionally, until the meat is no longer pink, and the juices are clear. When beef has cooled, add Mrs. Dash® Southwest chipotle 10-Minute Marinade. In a clear bowl layer half of lettuce, then

ground beef mixture, then layer 1/4 C. cheese. Layer remaining lettuce and beans. Top with diced tomatoes, remaining 1/2 C. onions and remaining cheddar cheese.

Yield: 4 Servings.
