Southwest Veggie Burgers

You'll want to become a vegetarian when you taste these burgers!

  • 1 C. steamed and cooled white rice
  • 1/2 C. canned corn
  • 1 green pepper, finely chopped
  • 1/2 C. white onion, finely chopped
  • 1 tsp. black pepper
  • 1 tsp. salt
  • 1 tsp. lemon juice
  • 1 tsp. chili powder
  • 4 hamburger buns

Put rice, corn, green pepper, onion, pepper, salt, lemon juice, and chili powder into your food processor and pulse until mixture becomes coarse and mealy.  Shape into 4 patties and refrigerate for 2 hours or more.  Grill patties until cooked through, then serve on buns.

Serve with: Sweet Potato Fries
