  • 4 C. romaine lettuce
  • 2 Tbs. olive oil
  • 4 chickens
  • 1 pkg. taco seasoning mix
  • 2/3 C. water
  • 1 (15-oz.) can corn, drained
  • 1 (16-oz.) jar salsa
  • 2 C. Mexican-blend cheeses, shredded
  • 1 tomato, sliced into wedges
  • 1/4 C. red onions, chopped
  • 2 C. sour cream

Heat olive oil in 10-inch skillet and cook chicken until done. Add seasoning mix and water. Stir to combine. Simmer chicken for 5 to 6 minutes. Remove from skillet. Add corn and heat until warm. Cut lettuce and place on platter. Top with chicken, corn, salsa, cheese, tomato, onions and sour cream.
