This Southwestern chicken soup is so yummy! It's spicy and cheesy at the same time.

  • 2 Tbs. olive oil
  • 1 1/2 lbs. ground chicken
  • 1 C. onion, chopped
  • 1 C. red bell pepper, chopped
  • 1 15 1/4-oz. can corn, drained
  • 1 15-oz. can black beans, drained
  • 2 14 1/2-oz. can tomatoes with green chilies
  • 2 C. chicken broth (plus a little more)
  • 2 Tbs. dry taco seasoning
  • Garnish: sour cream and corn chips
  • 1 lb. Velveeta cheese, cubed

Heat oil in soup pot, cook chicken until almost done, add onions and bell pepper. Cook until veggies are soft and chicken is done. Add corn, beans, tomatoes, broth and seasoning. Let simmer for 15 minutes (if too thick, add a little more broth.) Add cheese and mix until well incorporated, let simmer for about 20 minutes. Garnish each serving with sour cream and corn chips.
