Have some leftover chicken? Toss it into this simple Southwestern salad for lunch this week! This salad has a kick of lime and cumin, but could easily be spiced up any way you like it and serve with a side of guacamole.

  • 2 C. cooked chicken, chopped
  • 1/3 C. lime juice
  • 1 tsp. oregano
  • ¼ C. olive oil
  • ½ tsp. cumin
  • ½ red onion, sliced
  • 2 tomatoes, diced
  • 1 can black beans, rinsed and drained
  • 1 small can sliced black olives, drained
  • 1 bunch Romaine lettuce
  • 1 C. cheddar cheese, shredded
  • Tortilla strips

In a large bowl, combine chicken, onion, tomatoes, black beans, and olives. Toss with lime juice, oregano, olive oil, and cumin. Serve on top of lettuce with cheese and tortilla strips.
