Southwestern Hamburger Casserole

This very hearty, tummy filling casserole was made up from a combination of my mine and my husband's favorite ingredients. It has a mixture of meat, vegetables, spices and cheese. Mm! Mm! Who could resist those combinations? This casserole is an all in one meal for the entire family that will keep you coming back for seconds and still have leftovers.

  • 2 lb. lean hamburger meat
  • 1 large can petite diced tomatoes
  • 1 pkg. taco seasoning mix
  • 1 can sloppy joe sauce
  • 1 Tbs. parsley
  • 1 Tbs. sage
  • 1 onion, finely chopped
  • 1 green pepper, finely chopped
  • 1 can corn
  • 1 can mushrooms
  • 1 C. water
  • 2-3 C. shredded cheese
  • 2 cans biscuits

While browning hamburger meat, add onions, peppers, parsley and sage. When meat is completely browned, drain off any excess grease. Over low-medium heat add tomatoes, corn, mushrooms, taco seasoning, sloppy joe sauce and water. Simmer for approximately 10 minutes. Transfer to a 9x13-inch casserole dish. Add cheese on top and then layer biscuits. Put in a preheated 350 degree oven for approximately 15 minutes or until biscuits are golden brown. Serve warm as a complete wonderful tasting family meal.
