This rice casserole is full of flavor; it's a perfect accompaniment to your main course.

  • 1 Tbs. olive oil
  • 1 medium onion, chopped
  • 4 C. cooked brown rice
  • 8 oz. grated Monterey Jack cheese
  • 1/2 C. low-fat yogurt
  • 1/2 C. low-fat milk
  • 1 C. salsa
  • 1/4 C. minced fresh cilantro
  • 1.3 tsp. chili powder
  • salt and pepper to taste

Preheat oven to 350 degrees.  Grease a 1 1/2 quart casserole dish.  Heat oil in a small skillet, add onion, and saute until lightly browned. 

In a bowl, combine onion with all other ingredients.  Stir together and pat mixture into the pan.  Bake for 35 minutes, or until top is golden and bubbly.
