Southwestern Rice Casserole
Ingredients
- 1 Tbs. olive oil
- 1 medium onion, chopped
- 4 C. cooked brown rice
- 8 oz. grated Monterey Jack cheese
- 1/2 C. low-fat yogurt
- 1/2 C. low-fat milk
- 1 C. salsa
- 1/4 C. minced fresh cilantro
- 1.3 tsp. chili powder
- salt and pepper to taste
Directions
Preheat oven to 350 degrees. Grease a 1 1/2 quart casserole dish. Heat oil in a small skillet, add onion, and saute until lightly browned.
In a bowl, combine onion with all other ingredients. Stir together and pat mixture into the pan. Bake for 35 minutes, or until top is golden and bubbly.
