Ingredients
- 1 1/2 lbs. lean ground beef
- one 15-oz. can beef broth
- one 15-oz. can whole kernel corn, liquid reserved
- two 15-oz. cans pinto beans, liquid reserved
- two 15-oz. cans Mexican stewed tomatoes
- 1 Tbs. beef seasoning
- one 16-oz. Velveeta cheese, cubed
Directions
In a skillet, brown beef until no longer pink. Place in a 5- to 6-quart slow cooker and add broth, corn, beans, stewed tomatoes, and beef seasoning. Cook on low for 5-6 hours. When ready to serve, fold in cheese and stir until cheese melts.
