Ingredients
- 1 9" Refrigerated Pie Crust
- 1 Tbsp Butter
- 1 Large Tomato
- 2 Jalapeno Peppers, diced
- ½ cup Canned Mexicorn, drained
- 2 Eggs
- ½ cup Half & Half
- 1 cup Shredded Sharp Cheddar Cheese

Directions
Thaw pie crust and preheat oven to 375 degrees. Unroll crust and place into a casserole dish. Sautee jalapenos and tomatoes in butter, then stir in corn. Pour mixture into casserole. In a separate bowl, whisk eggs, half & half together--pour into dish. Sprinkle cheese over dish and place in oven for 25-35 min, or until crust is a golden brown.
