Ingredients

  • 1 small green pepper, chopped
  • 1 small red pepper, chopped
  • 1 small yellow pepper, chopped
  • 1 small red onion, chopped
  • 4 flour tortillas
  • 1/2 C. shredded cheddar cheese
  • 1 steak, cooked and chopped
  • 1/4 C. fresh cilantro, minced
  • 2 Tbs. jalapeno pepper, chopped and seeded

Directions

In a large skillet, cook the peppers and onion until tender. Set aside. Lightly grease the skillet and add 1 tortilla. Sprinkle half of the tortilla with 2 Tbs. cheese and top with 1/4 of the steak, 1/3 C. pepper mixture, 1 Tbs. cilantro, and 1 1/2 tsp. jalapeno. Fold over and cook for 1 to 2 minutes on each side.
