  • 6 oz. chunk light tuna, drained
  • 1 Tbs. lemon juice
  • 1 seeded, ribbed jalapeno pepper; minced (optional)
  • 6 8" flour tortillas
  • 12 Tbs. shredded lettuce
  • 12 Tbs. prepared salsa
  • 12 Tbs. shredded cheddar cheese

Place tuna in medium bowl; flake into pieces. Sprinkle tuna with lemon juice; toss. Add jalapeno pepper, if using, and toss again. Lay out tortillas. Sprinkle shredded lettuce along the center of each tortilla. Top with tuna, salsa and shredded cheddar. Roll tortillas. Serve immediately.

Yield: 6 Wraps.
