Soy Burgers

Ingredients
- 2 lg. red leaf lettuce leaves
- 2 grilled-vegetable soy burgers
- 2 Tbs. goat cheese
- 1 bottled roasted red pepper, halved
- 1/2 C. BroccoSprouts
- 1/2 C. baby spinach leaves
Directions
Place lettuce leaves onto work surface, long side facing you. With fingers, press lightly to flatten center of each. Prepare burgers per package directions for microwave. Place 1 on center of each lettuce leaf. Top each with 1 Tbs. cheese, 1/2 red pepper, 1/4 C. each sprouts and spinach. Fold up bottom and sides of each lettuce leaf to enclose burgers. Serve immediately.
