Soy Burgers

A lettuce-wrapped burger has all the makings of a perfect meal: low-cal soy protein, plenty of colorful vegetables, lots of flavor. Try these vegetarian sandwiches at your next cookout. You'll be surprised how quickly they disappear.

  • 2 lg. red leaf lettuce leaves
  • 2 grilled-vegetable soy burgers
  • 2 Tbs. goat cheese
  • 1 bottled roasted red pepper, halved
  • 1/2 C. BroccoSprouts
  • 1/2 C. baby spinach leaves

Place lettuce leaves onto work surface, long side facing you. With fingers, press lightly to flatten center of each. Prepare burgers per package directions for microwave. Place 1 on center of each lettuce leaf. Top each with 1 Tbs. cheese, 1/2 red pepper, 1/4 C. each sprouts and spinach. Fold up bottom and sides of each lettuce leaf to enclose burgers. Serve immediately.
