Soy-Glazed Salmon with Cucumber

- 4 6 -ounce skinless center-cut salmon fillets
- 1 tbsp honey
- 2 1/2 tsp low-sodium soy sauce
- 1/2 tsp cornstarch
- 1 teaspoon sesame oil
- Pinch of salt
- 2 tbsp vinegar
- 2 tbsp olive oil
- 1 large cucumber, thinly sliced
- 3 scallions, thinly sliced
Preheat the oven to 400 degrees. In a microwave-safe bowl, mix together the honey, 2 tsp soy sauce and the cornstarch Heat in microwave until just simmering, or about 30 to 40 seconds.
Using half the sesame oil, rub each filet to coat and then lightly season with salt. Place the fish on a foil lined baking dish and place in oven. After baking for 5 minutes, brush each filet with the honey-soy mixture and then bake for an additional 7-9 minutes.
While the filets are baking, in a medium bowl, whisk together the oil, vinegar and remaining sesame oil and soy sauce. Add in scallions and cucumbers and toss. Remove salmon from oven and dress with sliced cucumbers, drizzling with the oil and vinegar mix, and serve.
